Professor Nicolás Oscar Soto Cruz is a bachelor’s in Biochemical Engineer (1993), Master’s in Chemical Engineering (1997), and Doctor in Biotechnology (2002) from the Autonomous Metropolitan University. He has been a Professor at the Technological Institute of Durango since October 2002, where he has supervised 25 master’s theses and four doctoral theses. Dr. Soto has been a member of the National System of Researchers of Mexico since 2002. He is the former President (2019-2021) of the Directive Council of the Mexican Association of Food Science. In recognition of his career and contributions in the professional field, in September 2019, the Autonomous Metropolitan University awarded him the Appointment of Distinguished Graduate.
