Professor Perla Osorio has a PhD in Food Science from Universidad Autónoma de Querétaro, a MSc degree in Food Science and BSc in Nutrition both from the Instituto Politécnico Nacional (IPN), Mexico. She in member of the National System of Researchers, México (SNI II), Member of the Mexican Society of Nutrition and Food Technology, the Latin American Nutrition Society, Institute of Food Technologists USA and the American Chemical Society. Professor Osorio-Díaz has published more than 60 JCR manuscripts, she has an h-index of 22 and more than 1368 citations.
Her research lines are based in the carbohydrate digestibility and its effect on health, the in vitro colonic fermentation of carbohydrates and the development of functional foods with an emphasis on indigestible carbohydrates.
