Dr. Serna holds a degree in Agriculture and Animal Science from Tec de Monterrey and has a Master’s degree in nutrition and a PhD in Food Engineering at Texas A&M University. He has worked and consulted for Mexican and international businesses as well as agencies such as the Centro Nacional de Investigación de Alimentos, in Rio de Janeiro, Brazil, the US Agency for International Development, Gamesa, GIMSA, Química SUMEX, Omega Tech and other organizations related to food and nutrition.
His research work has based in Biotechnology, Nutriomics and Emerging in tje Biorechnology research group. He is also the director of the Center of research and development of proteins (CIDPRO, in spanish). As a professor, he has mentored more than 70 masters and doctoral students. Its research focus include the processing of cereals and oilseeds, the extraction of phytochemicals for medicinal use and the extraction of new generation proteins.
He has published three books, 73 chapters, and more than 250 articles in prestigious scientific journals. Thirteen encyclopedia articles and inventor of 12 patents . Dr. Serna has been recognized as honorary doctorate by the University of Sonora, the American Society of Nutrition, the American Association of Chemicals for Cereals, the American Association of the Consulate of Quality, the Institute of Food Technology and the Mexican Academy of Sciences .
