Olga Martín-Belloso is a Spanish chemist specializing in food technology and professor at the University of Lleida. She is the first Spanish woman to join the International Union of Food Science and Technology and is president of the European Federation of Food Science and Technology. 

Her interests include food preservation using high field density electrical pulses and the development of safe and healthy food products. Martín-Belloso has studied coatings, including emulsion-based nanostructures, that incorporate active ingredients such as antimicrobials, anti-browning compounds and texture enhancers. She is the director of the Doctoral School of the University of Lleida. She was also appointed ambassador of Spain of the Global Harmonization Task Force. She was elected president of the European Federation of Food Science and Technology in 2019.
